Stuffed Chicken Breast header

Preheat oven to 350°

Ingredients:
2 Chicken Breasts
½ Jar 2Hotpeppers dip (either Artichoke & Crab, Spinach & Crab or Artichoke & Spinach)
8 oz of Cream Cheese OR Ricotta Cheese
1 Tbsp 2Hotpeppers Pineapple Mango Salsa

Step 1: The Chicken

Place 2 breasts at a time in a large zip bag and pound out flat. If you don’t have a kitchen mallet or meat tenderizer I just use a the bottom of a heavy pot or pan.

Step 2: The Filling

Take the ½ jar of the 2hotpeppers dip you selected and the cheese you selected (cream or ricotta) and mix well with an electric mixer.

Place 1 teaspoon to 1 tablespoon depending on breast size in center and spread out slightly. Roll up and secure with tooth picks.

Step 3: The Finishing Touch

Top with a tablespoon of 2hotpeppers Pineapple Mango Salsa. Bake uncovered for 45 minutes, let set for 10 minutes and serve with your favorite side dishes.

Preheat oven to 325°

Ingredients:

Meatloaf Ingredients
2 lb. ground round or chuck
1 small onion, chopped fine
½ tsp. salt
Dash of oregano
2 minced garlic gloves
¼ tsp. pepper
¼ tsp. celery salt
2 eggs
1 tsp. basil
¼ cup Italian bread crumbs
Filling Ingredients

2 cups of Shredded Mozzarella Cheese
½ a jar of 2hotpeppers Artichoke Crab Ultimate Dip

Topping
2 Tablespoons of 2hotpeppers Pineapple Mango Salsa

Step 1 - The Meatloaf

Mix all meatloaf ingredients above in a large bowl using your hands. Combine well. Flatten out the meat mixture on a sheet of wax paper. Flatten to about ¼ to ½ inch in a square shape

Step 2 - Stuff & Roll

Spread ½ jar of 2hotpeppers Artichoke & Crab Ultimate Dip over the meat. Sprinkle 2 cups of shredded mozzarella cheese over meat. Then like rolling a jelly roll, lift the edge of wax paper and lift up and roll into a cylinder and tuck both ends under and place in a loaf pan.

Step 3 - The Finishing Touch

Pour 2 tablespoons of 2hotpeppers Pineapple Mango Salsa over the top and bake for 45 minutes. Let stand 10 minutes for cheese to set slightly prior to slicing. Serve with your favorite side dishes.
