
Preheat oven to 350°
Ingredients:
2 Chicken Breasts
½ Jar 2Hotpeppers dip (either
Artichoke & Crab, Spinach & Crab or Artichoke & Spinach)
8 oz of Cream Cheese OR Ricotta Cheese
1 Tbsp 2Hotpeppers Pineapple Mango Salsa
Step 1: The Chicken
Place 2 breasts at a time in a large zip bag and pound out flat. If you don’t have a kitchen mallet or meat tenderizer I just use a the bottom of a heavy pot or pan.
Step 2: The Filling
Take the ½ jar of the 2hotpeppers dip you selected and the cheese you selected (cream or ricotta) and mix well with an electric mixer.
Place 1 teaspoon to 1 tablespoon depending on breast size in center and spread out slightly. Roll up and secure with tooth picks.
Step 3: The Finishing Touch
Top with a tablespoon of 2hotpeppers Pineapple Mango Salsa. Bake uncovered for 45 minutes, let set for 10 minutes and serve with your favorite side dishes.
